I did that, but only for one pot (data entry, what else...)
and it worked not bad, but I have to move the slider relatively fast to
start ADC conversion.
But then you need something to stop conversion, e.g. when
ADC output doesn't change much (4LSB?) for longer time, you stop
the ADC.
Now I'd do constant scanning, as it is not much of a hassle
for modern CPUs.

I don't know about the polysix, but I think a simple RC-link and a
comparator could be used to detect potentiometer changes and trig
AD-conversion. That way you could use the same ADC for many pots without
wasting processor cycles.
