I just finished building a MIDI controller box with six pots which used a
PIC to generate the MIDI and a serial multiplexed DAC to scan the pots.
The project was about 90% software, and I somehow even got the software
right before trying to build the thing. :)  This was my first real
"finished" project, in a console box and all.  It was designed to control a
digital 303 emulator (hence six pots).

Anyway, I'd be up for something like this... At the very least I'd release
my MIDI PIC code to whoever wants to do it.  I like to think I'm
digital-savvy, but analog is still black magic to me.  I'd just need the
specs on a key matrix board, because I've never really dealt with something
like that.
