I started writing up a document describing a quantizer I built. It worked
but I never took it past the bench, just because my synth-diy timeslice has
sort of dropped off to zero in past few months. You can find it here:

Sorry I don't have a more detailed description of it on the web page, but
you should be able to understand what's there. The nice thing about it is
that is requires only one expensive chip (the DAC) for as many channels as
you like - each channel only needs a S&H chip, not a DAC (or ADC to DAC
pair). It also works with a +/-15v power supply.
