Making the whole thing purely voltage controlled instead of trying to
"emulate" the pots of a "normal" synth sounds like a better idea. The only
place I can think of where emulation is needed is ADSR envelope if you
want exponential attack/decay/release. LM13600 application notes have a
circuit that acts as voltage controlled resistor for those parts that
really need one.
I haven't tried any of this, so it's all theory still.
