MIDI Controllable Pots

Have you looked at the digital pots (that is if you would consider a 
digital solution)?  If my memory is accurate, these generally are 
controlled via some 3 wire serial interface and they range in resolution 
from 32 steps to 256 (and maybe more?).  Good luck finding non-SMD parts 
though.
