Pitch Bend is not the only MIDI control with more than 7 bits.  MIDI also has NRPN messages that can supply a 14-bit resolution from two LSB/MSB messages.  Primary applications for these messages are control of filter cutoff or pitch control of a sync'd oscillator.  The MIDI spec implemented these standards over five years ago.
