Heavens yes.

I manufacture a rackmount 4 channel midi-cv unit
(sold under the Frostwave name).
I used a MC68HC11 series chip.
Think carefully about what resolution you want on the output.
I think 12 bits is almost enough, but I went for a 16 bit 
serial D to A convertor, because I implemented pitchbend
and didn't want it steppy.
