The standard CV8 does not handle this situation ideally. Whenever you
release any midi note, it just turns the note gate off.

In my custom version of the CV8 firmware, I put in a note "stack". You can
play up to 8 simultaneous notes and the CV8 will remember them all. Each new
note changes the note CV, and when you release a note, it goes back to the
previous held note.

For example, if you press and hold C, and then press and release E, The Note
CV will first go to C, jump up to E and then jump back to C...

My firmware is not completed yet. I have a small bug still to be tracked
down.
Once I find it, I will make it available to the list.
