keyboard set-up

I am fairly amateur at this kind of thing, but I am planning to use an old
reed organ keyboard for CV source. I am thinking of a DAC for the voltage,
and a scanner that starts at the low end and resets when it senses a key
depressed. With this setup it seems that I need a lot of transistor
switches (1 per key). Is this the right way to do it? Is there a D/A out
there with latchable inputs? I also am interested in setting up a poly
keyboard, but I can't think of a simple way to do it.  Any suggestions
would be welcome.
