Does it really matter what a non electronic / synth instrument does
or is capable of modulation wise?

Yeah, it provides us with a well understood and proven pattern of
intracting with a musical instrument.

For instance, one thing mechanical instruments tell me about LFOs is
that I don't really care what the average DC value of the waveform is,
but I do want the waveform to start at zero effect, and therefore zero
volts. (By "start" I mean a musically useful reference point on the
waveform.)

If you follow this rule, sine and triangle waves should be centered at
zero volts, and square, pulse and sawtooth waves should run with a
minimum of zero volts.
