1) The LM3914 is linear response, the LM3915 is log response. Be sure to use
the right one to match the scaling you want. They are pin compatible.
2) The LM3914,3915, (do the still make the VU response 3916?) have
essentially, "open collector" outputs. You must use them as active low, or
have pull-up resistors. In dot mode, one output goes LOW. in bar mode one or
more outputs go LOW. Watch out for this....
3) I've used the LM3914 with diode-or gates, that might be an easy way of
steering just a few outputs. 

Off Topic:    I did this for an advanced "Color Organ" system. If there are
any EX (or current) hippies out there, I'll post the circuit. It was designed
to give varying light levels while having low flicker, and zero-cross
switching to eliminate the usual BUZZ of phase control SCR's. I wrapped 25' of
guitar cable around the AC line feeding the circuit. THAT quiet !!!
Guess how its done... Also uses dot/bar mode for strobe/pastel operation. And
AVC tracking of audio input level.
