Do you want to generate several control voltages with one knob (say, to
have one set of A, D, S and R knobs for several envelope generators)?
What about using rotary encoders instead of pots? Each cv needs one
counter and one DAC. When the rotary encoder is moved the counter is
counted up or down. You would not need any ADC.

When the "current value" is stored digitally rather than as a voltage in
a cap, it's easier to add a LED display for it.
