If you've got a fast enough computer and a decent enough sound card, try
downloading the Generator 1.5 demo on the Native Instruments page.  It'll allow
you to virtually build just about any synth you can imagine from the ground up
(VCOs, VCFs, VCAs - and all kinds of effects).  Here's their web page:

It's fully MIDI capable too.  Virtual patchcords are routed by clicking and
dragging with your mouse.  But be warned, once you start you won't be able to
stop!
  
It's a very addicting piece of software.  Gobs and gobs of knobs to tweak.  Have
fun!
