ODP: Enlighten a semi-novice

I use separate flux when the board is not solder plated, i.e. when I etch it
at home. And even then, when I intend to solder all parts immediately
after etching I dont paint the board with the flux before soldering.
Fluxing (?) eases soldering and helps to prevent 'cold joints'.
Also, when you live in industrial area (like me) you want to protect
the copper from oxidation - acid humidity and other stuff.
But pcbs from pcb shop come already solder platted, so I solder them
with no hassle.
That is if the 'flux' means what I think it means...
