Enlighten a semi-novice

I have built a number of devices from kits, and repairs etc and done my
share of soldering, but I always have used rosin core solder- can someone
enlighten me as to why I would want to use a separate flux and then have to
wash the board etc?
I assume it is because it looks better in the long run and maybe gives a
better connection, but it seems a lot of hassle. anyone?
