I'm not sure about your setup, but some sequencers allow you to assign
midi events to trigger record, stop, play, etc. I either assign the
lowest key on my keyboard to start and stop record (just make sure
it's not a part of your performance ;-), or when I'm playing midi
guitar, I use a Roland FC-100 foot controller to send CC messages for 
start and stop.

Another feature of some sequencers is the ability to rewind and record
continuously, (multiple-take?) recording each new take on a new track.

I'm not familiar with the MMT-8, but even if it responds to MMC messages,
you could possibly route through a computer and use a filtering program
to change some note message into a start or stop message.

Back in the days of my first 4-track cassette (fostex), I had these rubber
bulbs I could step on for punching in. Horrible. They rolled around with a 
mind of their own, trying to avoid being stepped on.
