well hello, and welcome aboard!

as for easy, there is a site (don't know the url, real helpful I know) that
has a beginner project which is a pseudo-theremin.

It is very simple to build, and will make sounds that can be altered in
different ways!

As for the complicated boxes for beautiful sounds...
	try to buy a pre-made PCB (from tomg perhaps) and then it's as simple
as populating the board (putting the parts into the holes)... You don't need
to know "why" it works, just follow the directions, like a puzzle, or a model
car or something.  they really aren't that hard to build either..
