Any decent 8 bit processor will do. PIC's, HCO5's (I love Motorola), even
(shudder) Intel. You want to use something that either has built-in ERPOM
or EEPROM, or start off with a single-board controller that sockets for
external non-volatile memory (lots of those around these days--some even
have I/O for LCD displays and what-not built-in). There's MIDI code for the
6805 at the Midwest Analog Products page.
