Not only is Gnuplot usefull, but also Octave a free Matlab-ish tool.
Octave uses Gnuplot for plotting, but processing stuff in Octave is
much more convenient than Gnuplot alone.

There are several tools, but I never took the time to investigate all
of them since Octave and Gnuplot fullfills most of my neads. Octave
has many usefull processing routines at hand, and if they don't fill
the need it is not hard to add some of your own.
