I have an Analog Devices EZKIT-lite. It has the ADSP2181 on board including  
the (stereo) a/d and d/a converters. But you might look at a kit from motorola  
with a 563xx dsp on it. These 56k DSP's are quite good for sound  
applications. I have one in my NeXT computer, and there are quite a few neat  
music applications for it.

Also, thanks to the recent hint on this list about the music-dsp mailing  
list, I found the music-dsp web site quite informative:
