Sources for fine grained cabinet wood?

A good use for old-growth if I ever heard it.
 
You have sort of hit upon it, without realizing it. These woods are the
materials of cabinet makers, if there are any left. My grandfather (who
taught me everything I needed to know about working with my hands in the
woodshop) was one such cabinet maker, and he seemed to be able to procure
whatever he needed.
 
Allthough, as time wore on, his lack of satisfaction with the quality and
price of wood became a sticking point. Today, cabinet makers have largeley
been absorbed into the display carpenter's trade, as far as I can tell.

Find a custom millwork shop... talk to their cabinet maker....
