I think the difference in the sound lies in the fact that SS amps usually 
work in feedback configurations. With high gain usually. Tubes are inherently 
more linear so you can get away with no or little feedback. Its probably 
difficult to build VT high-gain high-feedback amps because of the presence of 
DC-decoupling caps in the loop. (Motorboating...) Nearly all older (and
prefered) 
guitar amps have no feedback, or just feedback within one stage. Now for
audio 
amps of course low THD is desireable, and it is possible when you reduce your 
signal swing (talking about preamps here of course) or with clever
arrangements 
like the SRPP stage. The almost linear gain, together with very little
feedback 
gives you low intermodulation figures, and excellent impulse response. No 
overshooting as it is frequently seen with opamps, where at higher frequency 
the open loop gain falls.
