I wouldn't recommend the P5 if you don't like quantisation. If you touch a knob,
the value of this parameter jumps to the new position.
I know it's not as bad as the quantizing effects you mentioned, but its prohibitive
for tweaking sounds in realtime as well. I recommend an Obie instead.

If you like the sound of the Juno, you might consider buying a Juno-6 to reolace
the -60. No patch storage, but as far as I remember no quantisation of parameters 
either. (But double check this - my JU-6 is currently out of town.)
