You're absolutely right. While each operator has its own envelope
generator, there's only one MIDI controller possible for the whole
element. Filter cutoff can be modulated too, BTW.

The Yamaha VL synths are indeed much better in this respect. Perhaps
because they were meant for use with a wind controller. As I have read
in the reviews, the FS1R is very "modulable" too.

Within the bandwidth limit of MIDI (and of your MIDI gear) this is
possible with the Hyper Draw feature of Logic. It can be done with other
sequencer programs as well, I think. This is how I realised the 4-phase
LFO for a barberpole phaser a while ago. It was just a few mouseclicks.
I used four phasers from an Ensoniq DP/4 effects processor (where
*every* parameter can be modulated via MIDI controllers).
