The 81z is only a 4-op, but has many more waveforms than a DX7. So
basically the sounds are a bit less complex FM-synthesis-wise, but they
can sound very non-DX7-ish due to the variety of waveforms. There are
advantages to both machines. Some day when I have the room I want to pick
up a DX7IIFD. The 81z is nice because it's 1U rack space, 2 outputs, and
it 8 parts polyphonic/multitimbral. Very good for live gigging if you like
the FM synth sound.
