I am currently building a programmable midi controller based on an 8031
microcontroller. I have been lucky enough to design and build this as the
final project for my A.D. Engineering, Electronics course.
An ADC0809 reads the voltage from 8 pots. The pots surround an LCD display
that tells the user what parameter is being altered for each knob, for the
current program. 
When complete, if anyone is interested, I could send circuit diagrams and
perhaps the code or a programmed eprom.

The midi controlller will send either midi control or sysex information.
 
The use of a keypad and LCD will enable the controller to control many
different synths/samplers etc. while diplaying what each knob is editing.
