There has been an elektor circuit which does exactly what you want. It's
just a few quad opamps,
and does level isolate the parts of the circuit who are in contact with the
body!! I think I could probably redraw it and post it on my website, if
someone is interested.
(If I remember it right its amplification was 1uV input for 1V output.)
