Sorry, I haven't built one yet but it will be my next micro project.
The way to do it would be with a microcontroller. ( I use 8031 ).
Scan any swiches you might want for note on etc. Read the value off 16 pots
with an A/D, with this value being switchable between different channels
and note/velocity etc. (save money on pots). Store these values in ram.
Upon each 1/16 note clock pulse output the note/vel values to a D/A. BTW
the 8031 has built in UART so you can sync to midi clock if desired.
To be really fancy you can use an lcd and keypad to select what program you
want.
Hopefully this will all happen one day soon and I'll let you know how it went.
