Given the few options, and the increasing scarcity of CEM3340s and
other temp-stabilized VCO devices, maybe you should.

No, in fact, the supplies of tubes have IMPROVED in the last few
years. GLASS AUDIO magazine publishes a WORLD TUBE DIRECTORY
book every year, full of contacts and other info. And why don't
analog-synth parts mfrs do the same??
And one other thing: it's funny that 3340s and other such devices
are no longer manufactured. Making a temp-stabilized VCO of any kind
with semiconductors is now much more difficult than it used to be.
Yet I can still get thyratrons to make VCOs.....and thyratrons are still
being made, albeit in Russia.....
