I often put in pretty overrated supplies for another reason not discussed
here- less heat.
A small supply running at 90% of it's current rating will usually produce a
lot more heat dissipation than a large supply running at, say 40% of it's
rated load. Located inside of a modular, the larger supply will cause less
internal heat to cause drift of oscillators, etc.
It will also run more reliably in the long term with less thermal stress on
it's components and trims.
