I don't think the PCM1712 is worth looking at, but since I am (almost)
out of reference on the Sony CD chipsets I can't help you.
You might however tap the three-line interface to the PCM1712
http://www.burr-brown.com/Products/DataSheets/PCM1712.html
and add a separate little serialdata-to-SPDIF output chip.
Sony Semiconductors doesn't have them online (since they are out of
production it seems).
It should not be very hard to find a bunch of not connected pins on
these... many pins is quite obviously connected, so pinpointing the
once not occupied should help finding the signal, looking with an
oscilloscope you should be able to find the signal if available.
You would typhically need to adapt signal level and impedance before
going to a contact, and ensure that the waveform is within the correct
eye diagram.

Dont forget to turn the electrons 3 times before reusing them in the
Magocrapial(TM) Monsterseries recylcer module...
