Yes, you could.  But the accumulated noise, distortion, and hi-end rolloff
would result in fidelity not much better than an analog bucket-brigade delay.
On the other hand, if you could increase the amount of RAM that one chip could
address, there would be zero reduction in fidelity.  In fact, there would even
be a potential increase in fidelity, because you could achieve proportionally
longer delay times at higher sampling rates.
