Back in our digital class at school, we played around with
some BASIC Stamps ... a BASIC compiler on a little (about 0.5" x 1.5")
PC board. It is programmed through a serial link to your computer and run
off of a 9V battery. By running a simple (10 line or less) program, we
made randomly pitched square waves to produce a lovely "computer
sound."
(Why don't computers Always make that noise!?) It should be simple
enough to tie the rate of pitch change to the resistance of a pot.
Problem: using one of these "Stamps" would be overkill and they cost
about a hundred dollars I think. However... since they could do much
more, it is a fun device that you can use for grander things and easy to
program too.
Here might be an advantage over a sample and hold type circuit: Instead
of having the pitch change at regular time intervals, you can easily have
that period be random also.
Anyone have opinions on different brands of Stamps? Or do you only
work with eproms and stuff?

I am interested in building a little hand held device to generate
little sci-fi and computer sounds that are adjustable. Does anyone
have any ideas or know of any kits I could combine.
