Another data sheet to check out can be found at

That page has a link to a complete data sheet in pdf format for a part
called the IVS1530. It's a 30 second voice recording chip which uses
multi-level Flash memory cells. They claim that each cell can store more
than 256 voltage levels. The complete data sheet shows an application
circuit that uses about 20 external components including the record and
playback switches, the (16 ohm) speaker, and an electret microphone. It
operates from a single-ended 5 VDC supply.

Looks like a great part for experimentation.
