asm-1 parts/substitutions

i'm not a complete moron when it comes to electronics, but i am a
physics major so when it comes to practical stuff like substituting
parts--which i'm sure any EE person would say is an art--i'm a little
lacking. so forgive the idiotic questions.
anyway, here's my Qs re the asm-1 and diy synths in general:
1st
nobody ever seems to mention resistance values for panel pots. why not?
are all the knobs on the asm-1 supposed to have the same nominal
resistance? i ask partly b/c i came across a box of like 300 100kOhm
pots. they're double, but so what if i can save the cost...
2nd
is low tolerance paramount for the metal film resistors? it would save
me more cash and lots of hassle if i could just use my 5% tolerance guys
3rd
the midwest analog products ms100 power supply includes a third, +5v
source. what is this used for, generally?
