I vote for 2 PCBs, but because of the easy of building the one PCB, and the
fact that you could always leave the electronics off the one panel and wire
in a second, I think it really doesn't matter all that much. Maybe just
offering a "pots only" PCB for experimenting or builder modulaes would be
best.

Panasonic <<does>> make the same pots in a metal, threaded bushing version.
They are more expensive, but four or five pots should do a good job of
carring the weight of the PCB. See the current Digikey catalog.
