Funny you should mention that, PAiA has just released a new EPROM for
their midi computer that does just that.  Check their web page, and
look in the Finger Drum section.  (Actually, look in the What's New
section - it was the most recent entry a day ago.)

Technically, their box is a cv->midi (that's right, cv->midi) converter.
So, just tie up to 8 knobs as voltage dividers from a +5V supply, and
you're in business.
