well this is where i get flamed i guess but.......
what about a M*** (not Moog) keyboard and a midi-cv convertor?
that way you get a velocity output to put to a vca or filter as well..

or Roland used to make a pure analog master keyboard for their 100M modular
series, in a couple of varities

but if you really want to DIY, the cheapest option is to get a keyboard
section from a clapped out organ....try for one with 2 contacts per key,
this gives scope for more fun
