Fender use to make such a pedal. I think theirs was used for volume 
and tone. You might try pawn shops for these. I've never been able to
come across any, just seen 'em in old catalogs. Nice concept though,
a joystick for the foot.

For standard one axis foot controllers, buy the cheapest volume pedal
you can find. Typically most have a slide-on plastic gear that will
fit on a standard toothed-shaft pot, allowing you to change values
for specific applications.

Sometimes you need to change the jack. For example, making a 
controller for the Lexicon Vortex required a connection for all 
three terminals, a stereo jack and cables.

Roland makes a pedal used in their guitar synth line called the EV-5.
These have a built-in cable terminated w/ 1/4 inch phone jack and are
probably less flexible (and more expensive) than the average volume
pedal.
