What about a 6811 series microcontroller? 
It's a 8/16 bit hybrid.  It has several ports parallel and serial, 
setable timer, and a A/D converter.  I think the A/D is even 
multiplexed with S&H circuits. They come in different configurations
of RAM, EEPROM, Memory backup, etc.
                ^^^^^^^^^^^^^
The assembly code is pretty easy.  Everything is pretty much self 
contained, so a minimum of external parts are needed.
