Yes, there is a good reason for some of it. It is infomation on where the
message should be sent and also some tracking info of how it was routed to you.
Normally you should not see that much of it (except the Subject, To and CC
lines). There is also information on who sent it, who to reply to and extra
info such as URL to the sender etc...

It's all standardized and I think a view at

http://www.it.kth.se/docs/rfcs/dir/mail.html

can give you an insigth into the field. Look in the Format table and you will
find some info. The SMTP table is also worth looking at. Recall some of these
RFCs are standards and are not intended to be easy to read as a first 
introduction.
