There is still a German or Swiss company making many different types of
matrix switches and patch panels ala Ems or Arp 2500 styles. I have their
literature around here somewhere.

As for matrix switchers, both Harris and Mitel make some great crosspoint
switchers up to 16 x 8 and they can be cascaded and have on board latches,
etc. DC to 50mhz, low crosstalk, etc.
