inexpensive pots ?

I use cermet pots only where really necessary. Cermet pots are
said to have better resolution, i.e. you can set them better to 
the value you desire. In the Formant cermets are only used as
the coarse octave tuning pots, all others are carbon. 

For applications where you just need to set a coarse control
voltage I'd simply use carbon. Where extra-fine control is
necessary, or stability or low-noise you could use cermet. 
Those cermet pots really are quite expensive.

For regular pots I always use Piher metal shafts and metal body.
Piher also makes them in plastic, but I don't like them. 

The Formant uses pots with 6mm shafts, but I prefer the 4mm 
smaller pots these days, as you can make much more compact
fronts with them.
